Vegan Vegetable Primavera

Vegan Pasta Primavera

Throw as many vegetables as you got in this easy, creamy pasta!

  • 8 Baby Bella Mushrooms
  • 1 Red Bell Pepper
  • 1 Zucchini
  • 1 box Rotini Pasta
  • 1 cup Almond Milk
  • 1 tub Kite Hill Vegan Ricotta Cheese (optional) sub flour to thicken
  • 1 cup Nutritional Yeast
  • Salt & Pepper to taste


  • Start by boiling your pasta of choice, take out a few minutes before done.
  • Dice the vegetables and sauté until soft in olive oil
  • Once the vegetables are soft, add the almond milk (use more if needed) it should cover the veg, will seem like too much at first
  • Bring to a boil then simmer
  • Add the nutritional yeast and ricotta (if you aren't using ricotta add some flour to thicken the sauce)
  • Simmer until you have reached your desired thickness
  • Salt & Pepper to taste
